History of Pinocchios Part 1 ...
Pinocchios
was created out of two needs. One, to provide for my children. The
other, was to provide a great place to eat, in the community I lived in.
After
my divorce, as many people can relate to, I needed to find a way to
support my three children. With no money in the bank, I refinanced the
only possession I had (my car) and used the money to open Pinocchios.
With the support of a landlord that believed in my concept, I opened in
October 2003 in a little space on Main Street.
Times
were tough those first few years. There were days I worked in the
kitchen during the day, and waited on tables at night--hoping to make
enough money to pay my grocery bill. Slowly but surely, people found
Pinocchios and helped spread the word. My daughter, Erica worked with me
from day one, and has been an inspiration at every turn.
After
five years at my first location, I decided to make the (huge) move to
Harvest Junction at Hwy 119 . It felt very risky at the time, but it
seems to have been the right move. With a clean new building and a HUGE
parking lot, business has continued to improve.
The
restaurant business is a true joy for me. Not only do I get to be
involved with families celebrations and people enjoying a meal out, but I
can have my kids and (new) husband nearby!
I want to thank so many for their love and support over the years.
I
am in this business because of my passion for good food and being of
service to others. I hope that Longmont will be the home to many more
warm and cozy places to eat. I think it makes the community just that
much better.
